Recipe Serves 2
Top it with a mint yoghurt dressing
4 tablespoons of natural low fat yoghurt
1 tablespoon of fresh lime juice
1 teaspoon of fish sauce (available from all good supermarkets)
2 tablespoons of freshly chopped mint
Place all the ingredients in a bowl and whisk to combine
To assemble your dish place the lentil dahl on a plate, top with baby spinach leaves and green beans and drizzle the yoghurt dressing. For a real treat you can add fresh prawns marinated in a dash of olive oil with turmeric, salt and peper, then chargrilled until just opaque.
