Chicken Curry

Chicken Curry

Add or stir in a fresh coriander chutney.

 

RECIPE SERVES 6( but can be kept in the fridge in a screw top jar).

 

50g fresh coriander roughly chopped

1 tablespoon of lime juice

3 tablespoons of water

1 fresh chilli desseded and chopped

1 clove of garlic

1/4 teaspoon of sugar or sweetner

salt and pepper

 

Blend  half the coriander, lime juice, water, chilli and garlic in a blender/liquidiser until smooth. Then add the remaining coriander and continue to blend until smooth again. Taste and flavour with the sugar, salt and pepper and keep in the fridge until needed.
