I have had a great week this week food wise, I went through some recipe books that I’ve had for years and adapted them and planned my meals to suit. It has been very refreshing to eat something different as I have been stuck in a rut especially with lunches for work.
Instead of my usual Waitrose sandwich or boiled eggs I have been making meals at home in bulk such a roasted Mediterranean vegetables and veggie soups and then freezing them. I haven’t got lunchboxes small enough to hold the volume of food I can eat so I have been heating it up for my lunch at work and then eating the rest at about 5pm at work for my dinner.
Although it’s a lot of effort on the day I’ve cooked it really has paid off both in convenience at work and also financially, I can believe how many meals I get out of one batch! My husband could eat the batch in two sittings yet the soup lasted me for 6 meals! I know I won’t have the time to do it every week but I will certainly try.
I’ve been making much more of an effort with my appearance as well which has given me a boost, I have had my hair lightened, been going on sunbeds most days and also getting my nails done. It makes me feel like I want to try extra hard diet wise as I am investing in all areas of my appearance.
