Parsnip crisps (side dish/snack)

You will need:

  • 1 parsnip
  • 1 tbsp olive oil
  • 1tbsp Himalayan pink salt


Pre heat the oven to 160 degrees fan assisted and line a baking tray with some baking parchment. Using a vegetable peeler, shave the parsnip from root to tip. Place parsnip shavings onto a baking tray, drizzle with olive oil and sprinkle over the salt.Using a spoon evenly coat the shavings by tossing and turning the parsnip shavings. Place on the top shelf of the oven and roast for approximately 30 minutes or until nicely crisp. Transfer crisps onto a cooling rack and allow to call completely before serving. Serve as a simple and delicious side dish or a healthy snack!
