Courgette, Spinach and Sweet Potato burgers

You will need

1 Onion
2 Courgettes
2 handfuls of fresh spinach
4 organic eggs
200g of cooked sweet potato
2tbs coconut oil



Grate the onion and courgette, place into a sieve over a bowl and allow to drain for a few hours. Pat with kitchen tissue and place into a large mixing bowl. Add the eggs to the courgette and onion and mix together. Mash the cooked sweet potato and chop the spinach. Add all of it to the mixture and season to taste.

    In a large frying pan, warm the coconut oil on a medium heat. Use an ice cream scoop to pick up a bit of the mixture and gently place the 'burgers' in the hot oil to fry. Cook on a low-medium heat for around 10-15 minutes, gently burning them halfway through.
